Baked Oatmeal

Baked Oatmeal
1 [4 oz] Stick of Butter, Melted
5 Cups Milk
2 C Quick-Cooking oats
2 C Yellow Cake Mix [From a Box]
4 Eggs, Beaten
1/4 Tsp Salt
1-1/2 C Raspberries
1 Large or 2 Small Ripe Peaches, Sliced
In a large bowl, combine the oats and the milk. Microwave for 5-6 minutes, stirring halfway through. Let the oatmeal sit on the counter to thicken for about 10 minutes. Stir the cake mix into the oatmeal until smooth, then mix in the eggs, melted butter and salt. Pour batter into a prepared baking dish. [I used this one] Scatter the berries and peaches on top. Bake at 350° until the center is just set and seems almost undercooked, about 30-35 minutes. [should jiggle slightly] Serve warm.
Food For Thought
This breakfast bake from Chrissy Teigen's cookbook is really yummy! I made it on Sunday and it has lasted us all week. So it does make quite a bit. I would add more fruit next time. [I accidentally didn't buy enough for the recipe]
