Heath Bar Ice Cream Pie

 
1 Bag Oreo Cookies
6 Tbsp Butter, Melted
1.5 Quarts Toffee or Heath Bar Ice Cream [I used Breyers Heath Bar ice cream]
1 [12 oz] Bag of Mini Heath Bars, Chopped into Pieces
Hot Fudge Sauce
Caramel Sauce

Blend Oreos in a food processor until finely ground. Stir in melted butter until it's evenly mixed. Transfer to a 9 inch pie dish and press mixture into the dish to make an even crust. Spoon softened ice cream into the crust and smooth with a spatula. Sprinkle with the crumbled Heath bars and drizzle with the caramel and chocolate sauces. Freeze.
 
Food For Thought
 
As I mentioned last week, my father-in-law had back surgery. I made this in addition to the casserole and delivered it to them to have on hand for the days they didn't want to have to worry about cooking. [the casserole was a BIG hit, btw] This ice cream pie was SO easy to make. But I don't recommend delivering it if you live too far! LOL They only live a few miles from us and it had started to melt by the time we got there. If you can't find toffee or heath bar ice cream, buy vanilla and mix in some extra pieces of the chopped heath bar into the ice cream before putting it in the pie dish. Also, if you get stuck in a pickle like I did and you can't find caramel sauce, I used this recipe and it worked out perfectly:
 
1 C Brown Sugar
1/2 C Half-And-Half
4 Tbsp Butter
Pinch of Salt
1 Tbsp Vanilla Extract

Mix brown sugar, half-and-half, butter and salt in a saucepan over medium heat. Whisk 5-7 minutes, until it gets a little thicker. Add vanilla and cook another minute. Turn off the heat and allow to cool slightly then pour into a jar and refrigerate.
