Summer Grilling With KC Masterpiece®

When I think of summer, I think of grilling in our backyard with friends and family. One of my very favorite dishes is shrimp and grits. It can be done so many different ways, but I love New Orleans-style BBQ shrimp and grits. With it being Father's Day this past weekend, I knew we would have people over and wanted something I could make fairly quickly and easily. I stopped in at my local Kroger (you can find your local store here) and picked up a few boxes of the brand new KC Masterpiece® BBQ Sauce Mix & Dry Rub.

You can find it in the condiment aisle at your local Kroger near the other BBQ sauces. They have two great tasting flavors: Original and Sweet Honey.

For my particular recipe I used the Original. Each box comes with two 2 oz. pouches and makes 16 oz. of BBQ sauce. What I really loved most about the KC Masterpiece Dry Mix is the ability to customize it in so many different ways. You can make it taste exactly how you want by adding soda, beer, bourbon or juice. It is great for making dry rubs, marinades, sauces and dips.

This sweet and smoky dry mix would be great on chicken, pork, beef and vegetables. I loved it with the shrimp too! For my shrimp dish, I combined the KC Masterpiece Dry Mix, coarse ground pepper, creole seasoning, garlic, lemon juice and butter. I marinated the shrimp in the mixture then put them on the grill. This was one of the easiest recipes I've made and it was done in under an hour! See my full recipe below.

I love finding quick recipes like this one. It really allows you to spend more time with your guests and enjoy the day. You could add pineapple juice with the Sweet Honey mix and make a delicious pineapple grilled pork dish or grill some chicken with the Original mix and add it as a topping to a pizza for a yummy BBQ chicken pizza.

BBQ Shrimp

24 Jumbo Shrimp
4 Tbsp KC Masterpiece® BBQ Sauce Mix & Dry Rub (I used Original)
1 C Water
3 Tbsp Coarsely Ground Black Pepper
4 Tsp Creole Seasoning
2 Tsp Fresh Garlic, Minced
1 Lemon, Seeded
2 Sticks of Butter, cut into chunks
Warm French Bread for Serving
1. Place the shrimp, KC Masterpiece® BBQ Sauce Mix & Dry Rub, water, pepper, Creole seasoning and garlic in a large bowl and marinate for about 30 minutes. Remove the shrimp, saving the liquids, and add them to a grill pan. Squeeze the juice of the lemon over the shrimp and add the rind to the pan.
2. Cook the shrimp over high heat, stirring and occasionally turning them. After about 2 minutes the shrimp will begin to turn pink. Remove the shrimp from the grill and set aside.
3. In a sauté pan, add the juices from the marinade. (My grill happens to have a burner attached, but if yours does not you will need to move inside for this part.) Add the shrimp to the sauté pan and set your heat to medium-high. Gradually add the butter and stir until the butter is melted and incorporated into the pan juices. (about two more minutes)
4. Remove the pan from the heat. Serve the shrimp over grits and drizzle with some of the juices from the pan.

Parmesan Grits

1-1/2 C Grits
4 C Chicken Stock
1-1/2 C Heavy Cream
4 Tbsp Parmesan Cheese
Salt and Pepper
1. Combine the grits, chicken stock, heavy cream, salt and pepper in a pot. Bring to a boil then reduce to a simmer. Stir frequently.
2. Slowly add in the parmesan cheese.
